Instructions
  1. Preheat oven to 375 degrees. Drizzle beet with the olive oil and season with salt and pepper. Wrap beet in foil. Cook beet for 40-60 mins. (Check tenderness of beets every 15-20 mins after reaching 40 mins cook time.)

  3. Heat oil in frying pan over medium heat. Cook nopales over medium heat for 10 mins.
  4. Toast bread.
  5. Remove beet from oven and slice and quarter.
  6. Top toast slices with bean sprouts, beets, nopales, and dressing. Serve.

  1. Break uncooked pasta into 1-2 inch pieces.
  2. Add pasta to boiling water. Cook for 8-10 mins. Stir occasionally.
  3. Combine cooked pasta, vegetables, and beans in large bowl.
  4. Add dressing. Add salt and pepper to taste.
  5. Chill in refrigerator for 10 mins. Serve.

  1. Preheat oven to 400 degrees. Slice squash in half lengthwise and scoop out seeds. Drizzle halves with the olive oil and season with salt and pepper. Cook squash cut side down for 45-50 mins.
  2. Heat oil in frying pan over medium heat. Add garlic and chili pepper. Cook over medium heat for 3 mins.
  3. Add carrot, tomato, and onion. Cook over medium heat covered for 6 mins.
  4. Add dressing. Cook over medium heat for 1 min.
  5. Remove the squash from the oven. Use fork to scrape out “spaghetti.”
  6. Place spaghetti on plate. Top with veggies. Add pepper to taste. Serve.
