  2. Heat oil in frying pan. Cook nopales for 5 mins over medium heat.
  3. Toast bread.
  4. Add tomatoes, onion, and beans to pan. Cook over low heat for 2-3 mins.
  5. Top toast with veggie topping. Add pepper to taste. Serve.

  1. Break uncooked pasta into 1-2 inch pieces.
  2. Add pasta to boiling water. Cook for 8-10 mins. Stir occasionally.
  3. Combine cooked pasta, vegetables, and beans in large bowl.
  4. Add dressing. Add salt and pepper to taste.
  5. Chill in refrigerator for 10 mins. Serve.

  1. Preheat oven to 340 degrees.
  2. Combine beans, beets, and garlic. Mash ingredients with a fork until a paste-like consistency is reached.
  3. Shape bean mash into a patty shape with hands. Place on oiled baking sheet.
  4. Bake patty for 15-25 minutes. Flip patty half way through cook time.
  5. Place Cooked patty on bread slice and top with bean sprouts, onion, and dressing/condiment. Serve.
