Blueberry Crumble Baked Oatmeal

Ingredients

Crumb Topping

Instructions
Blueberry Topping
  1. Place blueberries in a small sauce pan with 1/4 cup water, honey, and vanilla extract. Heat the pan over medium heat and bring the mixture to a boil. Then, reduce the heat to medium-low and simmer until the mixture has thickened but is still juicy (about 15 minutes). Remove from the heat.
Oatmeal
  1. Heat the oven to 350 degrees F. Stir together the rolled oats, baking powder, and sea salt in a large mixing bowl. Add mashed banana, honey, milk, and vanilla extract and stir to combine.
Crumb Topping
  1. Add rolled oats, brown sugar, sugar, baking powder, cinnamon, sea salt, and nuts to a food processor. Pulse the ingredients until they turn into a coarse flour. Add the coconut oil and pulse a few more times, until the oil is evenly distrubuted throughout the mixture.
Assembling and Baking the Oatmeal
  1. Grease a 9" pie dish with coconut oil. Pour the oatmeal mixture into the pie dish. Evenly spoon the blueberry topping over the oatmeal and use a butter knife to swirl the blueberries through the oatmeal. Gently crumble the crumb topping over the oatmeal until it forms an even topping. Bake for 30-40 minutes, or until the oatmeal is set and the crumb topping is golden brown and bubbly. Serve hot, warm, or cold.
