What: Gastronomic Union of Tucson (GUT) Snout-to-Tail Dinner

If you’re still kicking yourself for having missed the first GUT Snout-to-Tail dinner, then here’s your opportunity to make good. The second dinner will take place this weekend at the Carriage House. This snout-to-tail dinner has a special theme: 32 Degrees North Latitude. This dinner will traverse laterally and globally along the 32nd North parallel bringing flavors from Japan, India, China, and, of course, Tucson.
Just like the first GUT dinner, this meal will be a collaboration of some of Tucson’s beloved and esteemed chefs and food professionals such as Max Provost, private chef and caterer, Jason Purdy and Matt Kraiss from Ermanos, C.J. Hamm, Saguaro Corners and Mulligan’s Sports Grill, Roderick Ledesma, Primo, Devon Sanner, The Carriage House, Eric Catalano, The Forum at Tucson, Janet Jones, Hacienda Del Lago, Ben Forbes, Forbes Meat Company, and Drew Burk, Mercenary Chef.
Ticket are $75 (plus tax and gratuity) and will include a 5-course menu with hors d’oeuvre and wine.

The Carriage House will host the event which begins with hors d’oeuvres at 6 pm, followed by dinner at 6:30. Seating will be limited.
Passed hors d’oeuvres:
Oysters on half-shell with bacon fat mignonette
Low-country shrimp boil skewers
Aged cheddar pimento cheese with ham garnish on saltines
Tonkotsu, alkaline noodles, i’itoi onion, soy and sherry vinegar pickled shiitake, pork jowl chashu
Pork Tikka Masala, coriander basmati, minted cashew cream, kiwi chutney, chicharron roti
Mesquite-smoked pork rib, Arizona-creosote polenta, proscuitto-wrapped belly rib, fermented nopales
Croquant pig ear on white chocolate, hibiscus & Fujian white Szechuan ice cream
My gut tells me that this dinner is going to make you squeal with delight.
