I’ve made a lot of smoothies in my lifetime. In fact, one of the first recipes I ever created was a smoothie recipe; I was six, and my grandma liked it so much that she put down her can of Ensure and asked for the recipe. At least, that’s how I remember it. Nineteen years later, I still make a smoothie for breakfast most days. I like smoothies because they’re a sweet and easy way to pack in a lot of nutrient-dense foods, such as antioxidant-rich blueberries, vitamin C packed oranges, and fibrous greens, early in the day. (Healthy breakfast means more dessert in my book.) While I love Shrek-colored Green Monster smoothies, sometimes I like to forget that I’m drinking a small salad for breakfast. Those are the times that I make this ultra-creamy, purple powerhouse that I call my Hidden Greens Smoothie.
The deep purple color of the blueberries and the sweetness of the bananas in this Hidden Greens Smoothie will hide just about any of the mild Tucson CSA greens (spinach, tatsoi, kale) that I’ve been getting in my shares for the past few months. Instead of a Shrek-colored smoothie, you’ll have a Barney-colored smoothie that tastes like a wonderfully creamy blueberry-banana milkshake with just a hint of nutty almond butter and soul-warming cinnamon.
This smoothie is great for picky kids (and adults) who aren’t so enthusiastic about eating their veggies. With three servings of fruits and veggies in each smoothie, you might find yourself making this Hidden Greens Smoothie every day!
