You know that zucchini in your fridge? The one you pretend not to see when you peruse the fridge for a snack around 10 p.m. every night? Well, get it out. Grate it up. Mix it with some other stuff. Make this Honey Cardamom Zucchini Bread. And never look back.

I was pretty skeptical when I learned of zucchini bread as a kid. I mean, you’re telling me that something with zucchini in it tastes as good as a sweet, moist, perfect-with-a-little-butter-on-top muffin? No way, I concluded.

I was wrong. I stuck with my good ‘ole banana bread until I became an adult and realized, hey, I can really use some extra veggies wherever I can get them. And that doesn’t exclude dessert-like breakfast (lunch, and dinner?) bread. Especially not when it’s Honey Cardamom Zucchini Bread.

This Honey Cardamom Zucchini Bread, fattened up with olive oil and sweetened with local raw honey, is warmed with spices like cardamom, cinnamon, and ginger. It’s undoubtedly the best way to use your neglected Tucson CSA zucchini. And it will surely trick your kids into eating veggies for breakfast (just don’t tell them what’s in it!).

Ingredients

Instructions
  1. Head the oven to 350 degrees F.
  2. Grease an 8x5" loaf pan with olive oil.
  3. In a large mixing bowl, whisk together olive oil and honey until the ingredients are evenly combined. Whisk in the eggs and set aside.
  4. In a small mixing bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  5. Add the dry mixture to the mixing bowl with the wet ingredients and stir with a spatula just until everything is evenly combined. Add the zucchini to the batter and fold it in carefully.
  6. Pour the batter into the greased loaf pan and use the spatula to evenly distribute the batter within the pan.
  7. Bake the bread for 30-40 minutes, or until a cake tester inserted in the middle of the bread comes out clean.
  8. Allow the bread to cool before serving.
