- 1 lb small red potatoes
- 1 Tablespoon olive oil
- 1 Tablespoon Dijon Mustard
- 1 Teaspoon Honey
- 1/4 Teaspoon Sea Salt
- Freshly Ground Pepper
- Heat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Cut the potatoes into 1/4" wedges and place them in a bowl.
- Whisk together olive oil, mustard, honey, sea salt, and pepper. Drizzle the mixture over the potatoes. Toss the potatoes with the mixture until they are evently coated.
- Place the potatoes on the prepared baking sheet, ensuring that they do not touch. Roast the potatoes for 10 minutes.
- Flip the potatoes and roast for another 8-10 minutes, or until they are golden brown and crispy on the outside.
