Meal Planning Monday

Whole-Wheat Spaghetti with Swiss Chard and Pecorino Cheese from Giada De Laurentiis: Onions, canned tomatoes, and Swiss chard (or whatever hearty winter greens you have on hand) are briefly simmered to create a sauce that is both savory and sweet. After the sauce is tossed with a pot of perfectly al-dente pasta, it’s all topped with chopped kalamata olives, toasted pine nuts, and a healthy mound of grated Pecorino cheese.

Butternut Squash Chili by Heather Christo: This hearty vegeterian chili, filled with tender butternut squash and white beans, brings a touch of heat to the table thanks to a few fresh jalapeños. Tear off a hunk of fresh bread and remind yourself of the joys of winter in the desert.

Green Chili Meatloaf with Maple Mustard Roasted Sweet Potatoes from Edible Baja Arizona: Tender mini meatloafs are infused with green chilis and given a disticnt Southwest flavor. We recommend serving them with the Maple Mustard Roasted Sweet Potatoes (at the bottom of the article) for a wonderfully balanced meal. Insider’s tip: make extra meatloaf for some killer sandwiches the next day.
