Instructions
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  2. Using your hands or the lid of a mason jar, form the mashed potatoes (this is a great way to used left over mashed potatoes!) into two rounds. Place the potato pancakes into the skillet of olive oil and allow them to fry for two minutes. Flip the potato pancakes and add the shredded Swiss chard to the skillet. Sprinkle the swiss chard with sea salt and pepper. Cook for an additional two minutes.
  3. Meanwhile, poach* the eggs.
  4. Plate the nests. Divide the Swissh chard between two plates, creating a circular shape. Place the potato pancakes over each pile of Swiss chard. Top each potato pancake with a poached egg. Sprinkle each egg with a pinch of sea salt and freshly-ground pepper.
