Apple Nut Muffins
  1. Preheat oven to 350 degrees. Lightly grease muffin tin or use paper liners. In a large bowl, sift and combine flours, baking powder, salt, sugar, and spices, then add apple. In a separate bowl, beat eggs. Add vanilla, milk, and oil to eggs and combine well. Add wet ingredients to dry and mix only until incorporated. Gently fold in nuts. Do not overmix. Pour into muffin tin. Sprinkle chia seeds, barrel cactus seeds, or finely chopped nuts on top of muffins. Bake 20 minutes or until a toothpick comes out clean. Makes 12 muffins.
