Instructions
  1. Heat oven to 325 degrees F.
  2. Grease an 8x8" baking pan with coconut oil.
  3. In a small bowl, stir together flax seed and water. Allow the mixture to thicken for a few minutes.
  4. Meanwhile, place the cooked beans, coconut oil, cocoa powder, sea salt, vanilla extract, coconut sugar, honey, baking powder, and flax/water mixture in the bowl of a food processor.
  5. Process the mixture on high for 3-5 minutes, until it is completely smooth and resembles brownie batter. You may have to scape the bowl down a few times during this process.
  6. Pour the batter into the greased baking pan. Sprinkle the chocolate chips over the batter and stir them in with a spoon.
  7. Use a tablespoon to dollop the peanut butter on top of the brownie batter. Use a butter knife to swirl it through the batter.
  8. Bake for 25-30 minutes, or until the brownies are firm. Allow to cool for 15 minutes before serving. Serve with a scoop of ice cream or a cold glass of milk.
Recipe Notes

Here's a great recipe for cooking dried black beans. Just be sure to leave out the leek and peppers for this one!
