  1. In a large bowl, toss veggies together and sprinkle with spices, salt and pepper. Drizzle with oil and a bit of soy sauce and toss well to coat.
  2. Spread veggies in an even layer on a baking sheet and cook at 375 degrees for about 30 minutes, turning about halfway through to brown evenly.
  3. Serve in a sandwich or tortillas with all the fixings.
