Instructions
  1. Heat olive oil and butter in a large soup pot over medium-low heat. Once the bottom of the pan is heated, add the garlic and sauté for 30 seconds, or until it is fragrant but not brown.
  2. Add the Swiss chard to the pot and stir immediately. Cook the Swiss chard for 3-5 minutes, or until the fibers break down and the chard is wilted.
  3. Add the stock, beans, parmesan rind, salt, and pepper to the pot and stir everything together. Simmer the soup for 10-15 minutes. Taste the broth and add more salt and pepper to taste.
  4. Serve the soup in bowls. Drizzle each serving with olive oil and liberally sprinkle each serving with grated parmesan and a pinch of red pepper flakes. Serve with good crusty bread.
