Using a sharp knife, slit the date down one side and remove the pit.
Fill the hole left behind by the pit with your favorite peanut butter. I generally use a knife, but you could also put the peanut butter in a small plastic baggie and snip off the corner to pipe the peanut butter into the dates.
Place the dates on a small parchment-lined pan and put them in the fridge while you prepare the chocolate.
In a small pan over low heat, or in a microwave, slowly melt the chocolate. Be careful not to burn it!
One at a time, drop the dates into the chocolate and roll them around until they're coated with chocolate. Scoop each chocolate-covered date up with a fork, tapping it against the side of the pan to remove any excess chocolate.
Place the coated dates back onto the parchment-lined pan.
If you’re making the dark chocolate version, sprinkle each date with a pinch of flaky salt.
Once all of the dates are coated, put them back into the fridge for at least 30 minutes, or until you’re ready to serve them.
