  1. Using a sharp knife, slit the date down one side and remove the pit.
  2. Fill the hole left behind by the pit with your favorite peanut butter. I generally use a knife, but you could also put the peanut butter in a small plastic baggie and snip off the corner to pipe the peanut butter into the dates.
  3. Place the dates on a small parchment-lined pan and put them in the fridge while you prepare the chocolate.
  4. In a small pan over low heat, or in a microwave, slowly melt the chocolate. Be careful not to burn it!
  5. One at a time, drop the dates into the chocolate and roll them around until they're coated with chocolate. Scoop each chocolate-covered date up with a fork, tapping it against the side of the pan to remove any excess chocolate.
  6. Place the coated dates back onto the parchment-lined pan.
  7. If you’re making the dark chocolate version, sprinkle each date with a pinch of flaky salt.
  8. Once all of the dates are coated, put them back into the fridge for at least 30 minutes, or until you’re ready to serve them.
Recipe Notes

*For the dark chocolate version.
