Eggs and Herb Butter over Sweet Potato Hash is my ideal 20 minute dinner. That being said, it’s also my ideal 20 minute breakfast and lunch idea. It’s quick, requires simple ingredients, and provides a satisfying heartiness that might overwhelm you (in the best way possible).
Picture this: a bowl filled with fresh leafy greens and topped with warm, tender roasted sweet potatoes and eggs over easy. Or over medium. Or fried. Or however you like to eat your eggs. But that’s not all; to top it off (literally) is a heaping spoonful of salted herb butter that instantly melts as it meets the greens, sweet potatoes, and eggs in your bowl. All in 20 minutes.
My inspiration for this recipe came from the Sweet Potato Hash at Prep and Pastry. I get it every single time I go there (along with a pasty and EXO Roast Coffee, of course) because it is just that good. However, I often crave this dish after 3 p.m. (when Prep and Pastry closes), and thus am forced to recreate the dish at home.
Tucson CSA just so happens to have the perfect harvest items to help me fulfill my cravings. Between the dark, leafy winter greens and the abundance of sweet potatoes, I am constantly eating the freshest local organic produce around. Tucson CSA even sells local pasteurized and non-pasteurized eggs for an additional cost.
So here’s what I’m recommending: go to Prep and Pastry before 3 p.m. and try their Sweet Potato Hash. Then, sign up for a produce share from Tucson CSA and prepare to have your mind blown by the incredible produce, friendly faces, and amazing meals that come of said produce.
