  1. 8 hours prior to making the hummus, add the beans and water to a slow cooker. Set it on low and cook the beans for 8 hours. Do not salt the beans, or use heavily mineralized water, as it will make your beans tough.
  2. Preheat the oven to 350 degrees F. Chop the top off of the head of garlic so that the cloves are slightly exposed.
  3. Pour 1 teaspoon of avocado oil and a pinch of salt on the top of the garlic, then loosely gather a piece of aluminum foil around the garlic. The garlic can be completely covered, just not tightly wrapped.
  4. Roast the garlic for 1 hour, then refrigerate it until you’re ready to make the hummus.
  5. When your beans and garlic are ready, drain the beans from any remaining water and add them to a food processor. Also add the olive oil, lemon juice, cashew butter, 1t salt, and 7 cloves of your roasted garlic. Blend until the mixture becomes smooth and creamy.
  6. If you want the hummus to be a bit lighter and looser, add 1T water (or more) and blend until it reaches your desired consistency.
  7. Add the Everything Bagel Seasoning, and blend the mixture again for a few seconds, until it is combined.
  8. To serve, garnish the hummus with a drizzle of olive oil and a few more pinches of Everything Bagel Seasoning.
