Instructions
  1. Heat oil in a large nonstick skillet over medium-high heat. Add all the ingredients and toss well to coat. 
  2. Cover the hash and let cook about 20-25 minutes, stirring occasionally, until veggies are tender and browning on edges.
  3. Serve each portion with slices of tomatoes and one or two fried eggs.
