- 1 pound Rice Noodles
- 1 pound Tofu extra firm
- 4 branches Celery
- 1/2 cup Basil fresh
- 1/4 cup Scallions
- 2 tbsp Mint fresh
- 1/4 cup Parsley fresh
- 2 cloves garlic
- 1/2 cup Peanuts roasted
- 1/4 cup Soy Sauce
- 1/3 cup Toasted Sesame Seed Oil
- 3 tbsp Sriracha
- 1 tbsp agave syrup
- 2 tbsp Rice Vinegar
- Juice of 2 Key Limes
- salt to taste
- Black Pepper fresh ground, to taste
- Cook rice noodles as per package instructions – rinse under cold water and set aside.
- Dice Tofu into small cubes, chop celery, finely mince garlic, and roughly chop all fresh herbs.
- Mix together in large bowl with peanuts. Add noodles.
- Pour sauce over salad and mix gently. Add salt and pepper to taste.
