Instructions
  1. Heat a large pan over medium heat. Use one tablespoon of olive oil to brush both sides of each slice of bread. Toast each piece of bread in the pan for 1-2 minutes on each side, until the bread is toasty and golden brown.
  2. Spread two teaspoons each of orange marmalade on two slices of bread. Spread one tablespoon each of hummus on the remaining two slices of bread.
  3. Heat one teaspoon of olive oil in the same pan over medium-low heat. Sauté the chopped greens with a pinch of salt and pepper for about 30 seconds, or until the greens are wilted. Divide the greens in half and place them on the pieces of bread lathered with marmalade.
  4. Divide the sweet potatoes in half and layer them on top of the greens.
  5. Heat the remaining two teaspoons of olive oil the same pan over medium-low heat. Crack the eggs into the pan and sprinkle each with a pinch of salt and pepper. Once the whites have set, flip the eggs and cook for another 20-30 seconds, or until they reach the point of preferred doneness.
  6. Place each egg on top of the bread layered with greens and sweet potatoes. Place the pieces of bread with hummus on the top of the sandwich. Cut in half and serve.
