  1. Head the oven to 350 degrees F.
  2. Grease an 8×5″ loaf pan with olive oil.
  3. In a large mixing bowl, whisk together olive oil and honey until the ingredients are evenly combined. Whisk in the eggs and set aside.
  4. In a small mixing bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  5. Add the dry mixture to the mixing bowl with the wet ingredients and stir with a spatula just until everything is evenly combined. Add the zucchini to the batter and fold it in carefully.
  6. Pour the batter into the greased loaf pan and use the spatula to evenly distribute the batter within the pan.
  7. Bake the bread for 30-40 minutes, or until a cake tester inserted in the middle of the bread comes out clean.
  8. Allow the bread to cool before serving.
