Instructions
  1. Heat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Cut the potatoes into 1/4" wedges and place them in a bowl.
  3. Whisk together olive oil, mustard, honey, sea salt, and pepper. Drizzle the mixture over the potatoes. Toss the potatoes with the mixture until they are evently coated.
  4. Place the potatoes on the prepared baking sheet, ensuring that they do not touch. Roast the potatoes for 10 minutes.
  5. Flip the potatoes and roast for another 8-10 minutes, or until they are golden brown and crispy on the outside.
