Place the cubed bread on a baking sheet. Drizzle the bread with olive oil and salt. Place the sprigs of rosemary and thyme on the baking sheet. Use your hands to toss the cubed bread until each piece is evenly coated with olive oil and salt. Some of the herb leaves will fall off during this process.
Spread the cubed bread out evenly on the baking sheet. Bake for 5-7 minutes, or until the croutons are golden brown and have crispy edges. Allow the croutons to cool before storing them in an air tight container. Use in salads, soups, or as a snack!
