Potato Pancakes
  1. Fire roast peppers whole, remove skins and slice into long strips.  Place peppers in a bowl and marinate with olive oil, salt, and pepper.
  2. Peel potatoes, grate onto a towel, and wrap to remove moisture. Mix in egg thoroughly. Heat olive oil in a skillet over medium-high heat. Cook until crispy and place on paper towels.
  3. Combine goat cheese and ricotta and season with salt and pepper. Mix until fluffy.
  4. Cook sausage until browned, and slowly sauté Vidalia onion slices.
  5. Toss fresh sage leaves in hot oil and remove when crisp, dry on paper towels.
Lemon Sauce
  1. Combine lemon juice, sage leaves, olive, oil and 2 egg yolks in the bowl of a blender and blend until smooth.
