Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and sauté until fragrant, about 30 seconds. Add mustard greens and cook until they are wilted, about two minutes.
  3. Season the greens with a pinch of salt and freshly cracked pepper.
  4. Add beans and vegetable stock to the pot, along with one teaspoon of salt and the red pepper flakes.
  5. Cover the pot and allow the soup to cook for 5-10 minutes.
  6. Serve in soup bowls with a tablespoon of grated parmesan on top of each bowl of soup and a pice of crusty bread on the side.
