Instructions
  1. Turn a gas burner on high and place one tortilla over the flame using a pair of tongs. Flip the tortilla every few seconds, until the edges are slightly charred and the tortilla begins to bubble. Repeat with the remaining tortilla. Place the tortillas on a plate.
  2. Spread two tablespoons of hummus over the surface of each tortilla. Sprinkle each tortilla with half of the corn, tomatoes, and feta cheese.
  3. Crack each egg into its own small bowl. Fill a medium-sized saucepan 2/3 full with water. Bring the water to a boil over high heat. Immediately reduce the heat to medium-low, bringing the water to a soft boil. Stir the water in a circular motion with a small spoon and gently place the eggs in the water. Allow the eggs to cook for 4 minutes before removing them from the water with a slotted spoon. Blot the eggs of any excess water and place one egg onto each prepared tortilla. Sprinkle with salt and pepper and enjoy!
