Crack each egg into its own small bowl. Fill a medium-sized saucepan 2/3 full with water. Bring the water to a boil over high heat. Immediately reduce the heat to medium-low, bringing the water to a soft boil. Stir the water in a circular motion with a small spoon and gently place the eggs in the water. Allow the eggs to cook for 4 minutes before removing them from the water with a slotted spoon. Blot the eggs of any excess water and place one egg onto each prepared tortilla. Sprinkle with salt and pepper and enjoy!
