We are in the thick of the holiday season, and it’s time to finalize your dessert spread! Whether you’re spending time with friends, family, or even by yourself, a tray of cookies and a warm drink are holiday necessities. So, for the next four weeks I am going to be providing some locally inspired recipes to get you all ready for the holidays!

My name is Kat Davis. I am a Nutritional Therapy Practitioner and the creator behind www.ideatthatfood.com. If you’re not a Bocaditos subscriber… you should be! I’m so excited to share these treats, which have been inspired by the flavors found in Baja Arizona.

Locally inspired treats are the perfect way to get into the holiday spirit.

To start this series I have a recipe for Red and Green Cookies that bring the colors of the holidays to your plate. These fluffy almond-scented cookies are studded with red cranberries and green pistachios. While cranberries are generally found in the Northeast, pistachios are grown just 80 miles east of Tucson, in Wilcox, Arizona. Robbs Family Farm sells a variety of flavored, roasted pistachios (the Hickory-Mesquite flavor is divine) at Tucson farmers’ markets, but for these cookies we’re going with their roasted, unsalted pistachios.

Red and Green Cookies are studded with dried cranberries and local pistachios.

Pistachios aren’t just known for their mildly sweet flavor—they’re also quite the nutritious nut. The mineral-rich Arizona soil infuses these small green nuts with important dietary minerals like magnesium, potassium, zinc, and copper. Even though it’s the holiday season, we still want to feel our best, right? Red and Green Cookies are lightly sweetened with maple syrup and practically melt in your mouth. When these cookies are done, they are still white, but you should see them just beginning to brown around the bottom edges. Be sure not to over bake them!

Ingredients

Instructions
  1. Preheat the oven to 375º and line a baking sheet with parchment paper.
  2. With an electric mixer, beat together the butter, maple syrup, egg, and almond extract.
  3. In a small bowl, whisk together the almond flour, arrowroot powder, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and beat everything together until combined.
  5. Add the pistachios and cranberries to the dough, and stir the dough until they’re evenly distributed. (Optional: reserve some of the cranberries and pistachios to sprinkle on the tops of the cookies before baking.)
  6. Scoop the dough onto the parchment-lined baking sheet, and flatten each cookie slightly. The recipe makes 15-18 cookies.
  7. Bake for 10-12 minutes, or until the bottoms begin to brown.
