What: Zona 78’s Farm to Table Wine Dinner

Zona 78 continues their tradition of multiple course wine dinners with the upcoming Farm to Table dinner event, planned for September 28 at 6:30pm. The five course meal will feature wine from Cottonwood winery Pillsbury Wine Company and ingredients harvested from local growers and ranchers.

Hayden Flour Mills and Sunizona Family Farms will provide grain for the evening; Sleeping Frog Farms, Arizona Tomato Company, and Sunizona Family Farms are the source for the produce and some of the herbs, with the rest coming from Zona 78’s Executive Chef Keith Parker’s herb garden; most of the evening’s meat will come from Five Sons Ranch, while the proscuitto is made in-house; Fistiki Farms will provide pistachios; the bread will be from Barrio Bread Company; the burrata and butter will be made in-house, while the Blue Chevre will come from Fiore di Capra; the olive oil will come from Queen Creek Olive Mill; and fresh honey and honeycomb will be provided by Noel Patterson.

Local Antipasti
Featuring Zona-made Proscuitto, Fiora di Capra Blue Chevre, Noel Patterson Fresh Honeycomb, Zona-made Whipped Butter, Zona-made Jalapeno Jam, and Barrio Bread Company Barrio Baguette.

1st Course

Burrata Salad
Featuring Arizona Tomato Company Heirloom Tomatoes, Zona-made Burrata, Sleeping Frog Farms Basil, and Queen Creek Olive Mill Extra Virgin Olive Oil.

2nd Course

Pork Cheek Terrine
Featuring Five Sons Ranch Pork Cheek, Fistiki Farms Pistachios, Corn Pudding, Sleeping Frog Farms Fried Hill Country Okra, Sunizona Family Farms Garlic Flowers, Chef Parker’s herb garden -grown Nasturtium, and Sunizona Family Farms Amaranth.

3rd Course

Lamb Agnolotti
Featuring Pasta made with Hayden Flour Mills Sonoran White Wheat and Sleeping Frog Farms Jimmy Nardello Italian Peppers, Five Sons Ranch Lamb Stuffed Agnolotti, Five Sons Ranch Lamb Brodo, Peas
Chef Parker’s herb garden -grown Mint and Oregano, and Sunizona Family Farms Red Mustard.
