Let’s be honest: Eating pretty things is way better than eating ugly things. Ugly things might taste great, but sometimes you just can’t make beef stew look all that appealing. That’s okay. Why? Because we’ll always have vegetables, and vegetables are always pretty… even when they have some imperfections. This Rainbow Slaw with Peanut Ginger Dressing is the ultimate beautiful food. I dare say it’s prettier than that new Unicorn Frappuccino, and it’s certainly better for you.

So, what’s in this magical Rainbow Slaw with Peanut Ginger Dressing? All of your favorite crunchy vegetables (raw beets+carrots+radishes+turnips+celery) from your Tucson CSA share, sprinkled with cilantro and nutty roasted peanuts, then drizzled in a creamy, sinus-clearing ginger peanut dressing.

One of my favorite things about this Rainbow Slaw with Ginger Peanut Dressing is that it gets better over time. By the time you’re ready to take the leftovers to work the next day, the salty+sweet dressing will have flavored every single thing in that slaw. And boy, is that a good thing.

Instructions
  1. Place beets, carrots, radishes, turnips, and cilantro in a large bowl.
  2. Place all dressing ingredients in a small bowl and whisk them together vigorously until they transform into a smooth and creamy dressing.
  3. Drizzle the dressing over the slaw ingredients and toss the slaw until the dressing is evenly distributed. Top the slaw with roasted peanuts and serve with wedges of lime.
